Happy Birthday Riley!

Do you recall me moping and whining about not being able to bake because of the condition of my kitchen? We’ll definitely have none of that anymore. After 6 long months of eating out and possibly gaining weight, my kitchen is officially finished with it’s renovation. I would also like to add that my oven is not only a regular oven, it’s a touchscreen oven. Fancy, I know. I already baked a few cupcakes last night and I think the designs turned out okay considering it was my first time shaping fondant. I still need a lot of practice. Let me know what you guys think 😀


A few months ago, I signed up for another meet and greet with Paramore just for the heck of it. Since I already won a meet & greet with them in 2007, I wasn’t expecting to win in the least bit. A couple of days ago, I signed on to the club website to check if they posted the winners. Well, it turns out that I have been picked to meet them again! Holy crap! I was planning on giving this meet & greet opportunity to my cousin Tam but apparently, that’s not allowed 😦 I can’t believe I’m going to meet Paramore again! Ahhhhh! The concert is 6 days away and I’m already squirming in my seat just thinking about it. My cousins are going to 2 of the shows; one takes place today, which is the first show No Doubt has here in LA. They are dedicated fans 🙂

Last, but not least: Riley turns 2 years old today! I can’t believe how fast time flies when it comes to kids and their growth. Riley is truly a blessing in my life, I can’t emphasize that enough. He is now talking and interacting, not to mention he’s in his “No” phase and I secretly love it. I also love the fact that he calls me “kee-kee” because it’s impossible for him to say Vicky. Did I mention that he’s an indestructible ball of energy? And speaking of balls (no pun intended), his birthday party this year will be basketball themed which is very similar to last year’s. My cousin decided to celebrate his birthday the day after the No Doubt concert, so hopefully I won’t be too dead the morning after. Here’s what his invitation looks like, so if you didn’t get one, you’re not invited. Haaa! Joke lang (that was for Tammy).

i’m bake-sick

cupcakeAs most of you know, my kitchen is still being renovated and my family has been cooking on our BBQ grill for the past month. As of today, the kitchen cabinets have been put in and stained a beautiful rich dark brown. I will be sure to post pictures once it’s completely finished. The appliances have not been put in yet, but the only one I’m actually concerned about is the oven. My oven (since no else physically uses it). My grandma will no longer use this oven as a storage area for her skillets and pans because my mother said so. I’m a brat, I know. Nonetheless I’m anticipating the installation of my brand new oven which hopefully is today. I need to get back to baking stat because I’m having withdrawals. It’s mostly Bakerella’s fault, her darn blog always inspires me. For the past few days, I’ve been obsessed with finding the perfect butter cream icing recipe and tips on decorating cupcakes. Although I’ve never been fond of using them, I’m deciding on actually trying out the decorating bags. For starters, I’ll practice with a 1M tip on wax paper and then move on to cupcakes. I don’t know if any of you noticed, but the red velvet cake mix has been lacking in the supermarkets this year. I have no idea why they’ve been taken off the shelves, but now they’re coming back. I’ve never tried the red velvet mix before, so just in case the supermarkets decide to ban them again, I went ahead and bought 3 boxes. These will be the cupcakes I make to practice my icing skills. Augh! I want my kitchen back now!

Well, in 3 weeks I’ll be on a cruise to Alaska! This year, I have no reason to dread the plane ride or the seasickness because my physician has written me a prescription for these (expensive but very effective) motion sickness prevention patches that go behind my ear (I’m not too sure of the actual name but if you’re interested just ask me and I’ll find out). Note: These are not over the counter patches you buy at a local drugstore. Unlike Dramamine, these patches will not make you sleepy and one patch can last up to 3 days (or until you shower). Yay patches!

Today I have to take my mom to Kaiser in LA for a colonoscopy (TMI, I know). She can’t eat any solid foods, just jello and fluids. I, on the other hand, will drive my butt to Kyochon and order myself a 4 peice drumstick. Yum.

Sadly, yesterday was my last day at the Vet Clinic so I decided to make a pit stop at a bakeshop in Chino Hills called Dolcissimo to buy cupcakes for my co-workers. I still can’t believe I blew $75 on 2 dozen cupcakes. The only thing I disliked about Dolcissimo was the fact that they charged me for boxes other than one that fit 12 cupcakes. For instance, I wanted to separate 12 cupcakes into 2 boxes of 6, so they went ahead charge an extra dollar for each box. Lame. The Doctor ended up loving the cupcakes and ate two of them on the spot. He’s not allowed eat sweets in front of his wife or he’ll never hear the end of it, not surprising. Speaking of Mrs. E, I didn’t get to say goodbye to her, but I doubt she cares. Haha! Speaking of goodbyes, I’m going to miss working there. I’m going to miss seeing the frequent clients that come in every single week. I’m going to miss the smell of scrub soap and the cold sterile tray (weird, I know). I’m going to miss my co-workers of whom I’ve learned most from while I was there. I’m going to miss that fact that we’re probably the only vet clinic that doesn’t have a computer and still uses manual filing. I’m going to miss hearing Dr. Evans ask “You know what I’m sayin’?!” every 5 minutes to the most irrelevant situations. Most of all, I’m going to miss the animals. Well, they were the main the reason I loved working there in the first place. The Dr. has already let me know that I’m welcome back anytime if I ever change my mind in the future. He’s definitely an unforgettable boss. Oh! I forgot to mention that I spoke to Dr. Maas over the phone a couple of days ago and he sounded much better than usual. He’s already up and about and almost fully recovered :]

Mother’s Day was fun. We had a small BBQ at my Auntie’s house in Brea and inevitably I overate. I made the mistake of feeding Pudge some human food that day and he ended up pooping diarrhea all over my Aunt’s grass. He then scooted his butt on the grass for about half a minute, which ended in a uproar of laughter from my family watching him do so. Fun stuff.

I finally ordered my mom’s gift today on; guess what she wanted? Another darn L.A.M.B. purse.

Every time I go to Melrose I blog about Yuri Japanese Cafe and how great their rolls and teas are. My sister and I have been urging the owner to franchise out to Rowland Heights because Melrose is just too far of a drive. The owner then tells me to follow Yuri on Twitter so I came home later that day and did. He then Twitters me a few weeks later and asked if I was the girl from Rowland Heights and, if I was, to call him because he had good news. So I call and he tells me the good news. There is now a Yuri Truck serving chicken and beef bowls and they’re coming here to Rowland Heights 😀

Thai Town was fun today. It’s always fun where there’s food involved, not to mention Thai food. My sister and I always look forward to the yearly Songkran Festival on Hollywood Blvd. Although it’s not celebratcimg0693ed the “traditional” way (in which there should be kids play fighting with water guns everywhere) it’s still always fun to just be there. There wasn’t much to buy at the place, I just sat around my cousin’s silver booth mostly eating and talking to family. Me and my sister made our rounds circling the entire festival about 10 times and I ended buying coconut juice two times. It was so good! I also ran into Arnie after not seeing him for a few years, so it was nice catching up with him. Oh yeah, there was also an odd abundance of pervo men this year makingcimg0716 moves at my sister; kind of disgusting. After being there for about five hours we stocked up on mangoes and sticky rice and headed back to the car. Being the thrifty person that he is, my dad didn’t want to pay $10 to park at a decent spot earlier today, so we decided to park a block away at an El Pollo Loco parking lot. Ghetto much? It turns out that the parking lot was “Private Property” so of course they were towing car after car. We were so lucky that we left the festival just in time for our van not to be towed. I hope my dad learned his lesson, hah!

Wonderful news! My dad has suddenly decided to sell the van and buy me a brand new car! I already took that peice of information as good news and expected something that was equivalent to my old Rav4, but then my cousin gives me even better news. It turns out my dad has decided on a Lexus RX. I know, an RX! My Aunt is also planning on getting the same car so we’re all going as a family this Sunday to a Lexus dealership together. This is definitely unexpected especially with my grandpa’s multiple accidents, the insurance issues, and our house’s current renovating conditions and whatnot. I feel like the luckiest girl right now and I just can’t wait until Sunday. The only catch to this is that my parents are not allowing me to get another white car. It’s kind of a downer because people knew me for my white Rav4 and I was hoping to carry on that color to the next car. Overall, I’m very very grateful that my parents love me enough to buy me a new one at all.

Today I babysat Riley at LA and then I came home and made Oreo truffles. I think I’m getting better at dipping.

Today (and yesterday) was my first attempt at making cake pops. Basically, it’s cake in lollipop form dipped in chocolate, candy melts, or whatever that’s capable of melting and hardening quick. To tell you the truth, I didn’t think I would be able to pull it off the first time (let alone pull it off at all), but it was pretty easy because I guess I’ve build up my patience. One thing that bothers me about these cake pops is that they are just too sweet. I can only nibble small amounts at a time; which I guess is a good thing because they aren’t that big to begin with. Give me some feedback on what you think!

Good news! I’m already into my second semester at PVAS. For those of you who aren’t familiar with (PVAS) it’s a vocational Veterinary Technician school i’ve been attending for a while. I just found out there aren’t three semesters but there are actually four. The fourth semester is an extended Alternate Route for assistants who are shooting to become an actual license vet tech. I can’t wait! Last night was the start of Veterinary Nursing 01, so goodbye Applied Basic Science! This semester we’ll be getting into the more hands on tasks such as learning how to place IV catheters, dental prophylaxis, and completing a long and painful task list, etc. The school anounced that they arranged for us to practice certain tasks at a designated veterinary hospital site less than a mile from our campus. Sounds like fun!

Today I drove my grandparents to their weekly grocery shopping shenanigans. Nothing new. They seem to stop at the same places every week, which I don’t mind. It’s kind of fun hearing my grandmother talk my grandpa to sleep while I’m driving. Boy, that woman can talk. She can ask about 100 questions within 2 minutes too. Okay, I’m exaggerating but it sure seems like a hundred.

Cramps wasn’t on my agenda today (but then again, when is it ever?) so I casually took 2 maximum strength Midols. Usually the meds kick in after about half an hour, but today it didn’t seem to work. One more Ibuprofen seem to do the trick. I wish there was a way to permanently get rid of my very very painful cramps every month without the option of birth control. However, today I did come across a temporary cure though :]

An update on my van. We had it towed and dropped at our usual automotive repair center. It’s pretty embarrassing that we’re getting to be regulars on their client list. About two months ago, we just had it freshly fixed because my grampa had ran it into the neighborhood community gate. Come to think of it, my grampa has a unlucky knack for running into things with this Sienna. Every now and then when I’m driving,  me and my sister see a knocked over traffic sign or a whole in a wall, we would crack a joke about how our grampa probably ran into that too. Lol! We’re mean, I know. At least my grampa finally learned his lesson (after the 80th time), it was pretty obvious when he told me he would never go near the car keys again :[  I’m using my uncle’s and auntie’s van for now; they’re in Thailand so I get the the honor of running up their mileage while they’re vacationing without me and my cousins.

Yesterday was my first attempt at making a 2-layered cake, one layer would consist of red velvet and the second layer is buttercream vanilla. For some reason the outcome of this cake looked much better in my head than it actually did when I finished it. No worries, it was only my first so I can’t beat myself up over it. The best part was knowing that I was actually baking everything from scratch and having it come out moist and tasting good. I also did a really good job on the buttercream frosting if I do say so myself. Well, Happy Birthday cous! I hope you liked it 😀



Tonight is my Hospital Procedures final, so that means I get a week long break from school! I’ll probably end up coming here to LA with my cousin and hopefully we can bring Riley here for at least one day. It’s only been a week that I haven’t seen the monster and I already miss him to death.

I also forgot to mention that I had a dream of baking last night. Weird, I know. Who dreams about baking stuff? There’s a perfectly good reason for this, trust me. For the past few days now I’ve been grossly obsessed with a blog called; she inspires me to, well, bake. If you’re not a big fan of reading through blogs (or reading at all) you can just look at her work on Flickr. I swear I get fatter and fatter every day just from looking at what she makes. She was also the person who inspired me to make the decision of buying a professional camera (a Canon, if you will). You can read about her combination for love of cupcakes and photography here.
